Introducing the second Colombian coffee of 2025, a remarkable addition to our International Coffee Finds series. We proudly present "Don Diego", a coffee from Finca El Paraiso, a renowned estate in the Cauca region of Colombia, owned and operated by Diego Bermudez. Since its founding in 2008, Finca El Paraiso has gained global recognition for pushing flavor boundaries through innovative processing techniques that blend science and artistry.
Named after the visionary processor, Diego Bermudez, Don Diego honors his journey from planting just 5,000 seeds on his family land to leading Colombia’s coffee revolution with award-winning results. Bermudez has cemented himself as one of the true leaders in the world of specialty coffee.
For coffee selection, Savorworks chose Castillo-Lychee, a variety cultivated at the highest recorded altitude in our portfolio, which already convinced us to explore its potential. The process begins with careful pulping and demucilaginating, after which the mucilage and pulp are transported to the pilot plant. There, specific microorganisms are produced to create a culture medium rich in aroma and flavor precursors. This medium is added to fermentation tanks, where the beans undergo a 36-hour pressure fermentation.
Subsequently, a thermal shock fixes more precursors, intensifies flavor, and seals the beans for optimal drying. The coffee is then slowly dried in a dehumidifier, preserving soft notes and preventing over-oxidation. Once stabilized and stored in a cool environment, the beans are carefully selected and threshed to meet strict quality standards.
