2025 New harvest Fruits Bomb features an innovative 56-hour Anti-Maceration Naturals process that delivers an outstanding cup and a captivating sensory journey.
Carefully selected, ripened cherries at 25.2 Brix are harvested from the renowned Line Patte block. After the removal of the floaters, a particular strain of yeast and lactic acid bacteria is added to the coffee in the bio reactors and a 600 millibar vacuum is applied. The cherries undergo a 56-hour fermentation in a bio-reactor, all in a vacuum atmosphere. This unique process develops a rich, complex profile with a bright cup and fruit-forward notes. Following fermentation, the cherries are slow-dried on raised beds over two days, with constant stirring, to preserve vibrant flavors and layered complexity. The result is a coffee bursting with brightness, intricate fruit and floral nuances, and a beautifully balanced profile, an extraordinary expression of innovative craftsmanship.
