Our latest Limited Edition of the current harvest from India's best and most famed estate "RATNAGIRI ESTATE". Better known as the "PROFESSOR" of the Indian coffee industry, Mr. Ashok Patre is the mastermind responsible for putting Indian coffee on the world map because of his exceptional knowledge in the field of coffee.

This is a 54-hour anaerobic fermentation natural processed coffee. It is from the CATUAI varietal grown on our farm at 4450 feet from the block called GIRI Patre. The Brix of the coffee cherries was 25.2 when harvested and they were put in the Bio fermenters after floater removal and allowed to ferment for 54 hours in a carbon dioxide rich environment with lab grown microbes isolated from the farm along with pectin enzymes. After removing the coffee from the fermenters, it was directly put on raised beds for slow drying. The coffee was then dried slowly with constant stirring over the next 31 days.

In the cup, expect a vibrant yet refined profile, bursting with tropical fruit character—led by notes of mangosteen and guava, layered with black plum and fig, supported by bright malic acidity and a long, elegant finish. This coffee reflects what Savorworks Specialty Coffee stands for: thoughtful sourcing, experimental processes, roasting expertise, an elevate brewing experience.
